Oatmeal Cookies Recipe
This is a quick and simple oatmeal cookies recipe that your whole family will enjoy. This recipe yields about 20-24 large cookies.
Ingredients:
- 3 cups old-fashioned rolled oats
- 1 cup walnuts or pecans, roasted (optional)
- 1 cup light brown sugar
- 3/4 cup unsalted butter, room temperature
- 1 large egg
- 1 teaspoon vanilla extract
- 3/4 cup all purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
Directions:
- Preheat oven to 350F/177C and line 2 baking sheets with parchment paper.
- Using an electric mixer, mix the butter and sugar until smooth and creamy.
- Add the egg and vanilla extract and mix again.
- In a separate bowl, mix together the flour, baking soda, salt, and cinnamon.
- Add this mixture to the creamy one and beat until well incorporated. Stir in the nuts and oats.
- Use 1/4 cup of batter and space the cookies about 2 inches apart on the parchment paper.
- Wet your hand and flatten the dough a little.
- Cook for 12-15 minutes or until light golden brown around the edges, and soft in the center.
- Remove from oven and let cookies cool for a few minutes.
