Oatmeal Cookies Recipe

This is a quick and simple oatmeal cookies recipe that your whole family will enjoy. This recipe yields about 20-24 large cookies.

Ingredients:

  • 3 cups old-fashioned rolled oats
  • 1 cup walnuts or pecans, roasted (optional)
  • 1 cup light brown sugar
  • 3/4 cup unsalted butter, room temperature
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3/4 cup all purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon

Directions:

  1. Preheat oven to 350F/177C and line 2 baking sheets with parchment paper.
  2. Using an electric mixer, mix the butter and sugar until smooth and creamy.
  3. Add the egg and vanilla extract and mix again.
  4. In a separate bowl, mix together the flour, baking soda, salt, and cinnamon.
  5. Add this mixture to the creamy one and beat until well incorporated. Stir in the nuts and oats.
  6. Use 1/4 cup of batter and space the cookies about 2 inches apart on the parchment paper.
  7. Wet your hand and flatten the dough a little.
  8. Cook for 12-15 minutes or until light golden brown around the edges, and soft in the center.
  9. Remove from oven and let cookies cool for a few minutes.
