Chocolate Chip Macaroons
This is a delicious chocolate chip macaroons cookie recipe that everyone in your family will enjoy.
Ingredients:
- 3 large egg whites
- 1 cup sweetened coconut, shredded
- 1/3 cup mini semi-sweet chocolate chips
- 2 tablespoons almond paste (marzipan)
- 1/4 cup granulated sugar
- 1/2 teaspoon cream of tartar
Directions:
- Preheat oven to 325F/165C and lightly coat cookie sheets with cooking spray.
- In a large bowl, mix together almond paste and sugar.
- Add coconut and chocolate chips and mix again.
- In a medium bowl and using an electric mixer on high speed whip egg whites and cream of tartar until stiff peaks form.
- Add half of egg whites to coconut mixture and slowly fold to combine.
- Gently and slowly, fold in remaining egg whites.
- Drop rounded teaspoons of dough onto cookie sheet.
- Bake for 20 minutes or until tops are slightly browned.
- Cool 1 minute on cookie sheet before transferring to cooling rack.
